BARRAMUNDI FILLET WITH GREEN CURRY SAUCE
*4X180-200gm WILD CAUGHT BARRAMUNDI (OR SADDLETAIL SNAPPER)
*Vegetable Oil Spray
*1/2 cup Thai Green curry Paste
*1 cup Coconut Milk
*300gm snake (or green) beans trimmed
*2 cups of Stir Fried Rice
vegetable Oil 1 tablespoon
3 rashers bacon, diced
4 green spring onions, whites chopped, green tops reserved
2 cloves garlic choped
4 cups long grain rice cooked
3 tablespoons soy sauce
Method
*Mix the curry paste and coconut milk in a saucepan and simmer
for 5 minutes. Stir occasionally
*cut the beans into bit sized pieces and boil until just tender (3-5mins)
*spray both sides of fish wil oil and cook in a medium-hot pan.
Watch carefully - 3-4 minutes per side at most.
*Spoon rice and beans onto plates -lay fillet alongside and spoon
over the sauce.
Enjoy - Serves 4 - Time: 15minutes.
